Cindy's Waterfront to Open at Monterey Bay Aquarium
Ocean-view restaurant by Chef Cindy Pawlcyn will feature new menus in newly remodeled dining room and cafe
Monterey, CA (April 8, 2013) – The Monterey Bay Aquarium restaurant has a brand-new name, look and farm-to-table menu from its award-winning culinary partner, Chef Cindy Pawlcyn, who has also transformed the menu and look of the aquarium’s self-serve cafe.
The restaurant and cafe have been completely remodeled and are reopening on Saturday, April 27. The new restaurant, Cindy’s Waterfront, brings Pawlcyn’s indelible culinary stamp to Monterey County. Aquarium visitors will enjoy Pawlcyn’s inspired seasonal dishes both in the full-service restaurant and the remodeled cafe and coffee bar. The beautifully redesigned space offers great dining and spectacular ocean views.

Cindy Pawlcyn and resident Executive Chef Jeff Rogers have crafted a menu composed of dishes featuring fresh interpretations of her well-loved seasonal California “comfort food." Cindy’s globally inspired selections will highlight seafood dishes in keeping with the Aquarium’s Seafood Watch guidelines.
Cindy’s Waterfront menu includes: Monterey Bay Calamari with Cindy’s curry vinaigrette; Grilled Line-Caught Albacore Sandwich with pickle ginger, wasabi and basil aioli; Hunan Grilled Chicken Salad with sesame noodles, chilies, peanut sauce; True Cod Soft Tacos with lime-cumin vinaigrette, tomatillo salsa; and Apricot and Sour Cherry Brioche Bread Pudding with caramel sauce and whipped cream.
Soups and starters prices range from $8 - $15; large plates and sandwiches $11 - $25; desserts $7 - $10. As with all three of her Napa Valley restaurants – Mustards Grill, Cindy’s Backstreet Kitchen and Cindy Pawlcyn’s Wood Grill and Wine Bar – Cindy’s Waterfront menu is ingredient-driven, local, sustainable and regionally focused.
The self-serve has nearly doubled in size with new enhancements such as daily updated electronic menu displays, making it easier for guests to select their food from the expanded menus. The cafe menu will boast new options including fresh-tossed salads, grilled-to-order hamburgers, brick-oven pizza and fresh organic coffees. The entry to the cafe has been expanded so visitors will now have a view to the ocean. In addition, the aquarium has completely rebuilt the kitchens, providing chefs with more space and new state-of-the-art equipment to showcase their culinary talents.
Cindy Pawlcyn, the aquarium’s culinary partner since 2010, has earned a reputation over the past three decades as one of California’s most recognizable chefs. Her iconic Mustards Grill in Napa Valley and other critically acclaimed restaurants have garnered her critical acclaim and numerous awards. She’s twice been nominated for a Beard Award as Best California Chef, and was honored with a Beard Award for Mustards Grill Napa Valley Cookbook, one of her five cookbooks.
“I am jumping with joyabout the opening of Cindy’s Waterfront,” Pawlcyn said. “The new restaurant and cafe will showcase the delicious, seasonal, sustainable foods of this bountiful region through dishes that reflect my culinary roots. I am thrilled to share them with aquarium visitors.”
The full-service restaurant will offer carefully chosen wine selections from regional vintners and small batch breweries as well as fresh, creative cocktails. Beer and wine will also be available in the new cafe. The coffee bar will feature organic coffee drinks, and a selection of house-made pastries and desserts.
With contemporary, urban interiors by EHDD and Michael Guthrie & Company, guests at Cindy’s Waterfront will enjoy stunning views of water and wildlife through floor-to-ceiling windows overlooking Monterey Bay. The walls of the restaurant and adjoining cafe will feature artwork reflecting the aquarium’s philosophy and commitment to local and sustainable ingredients. The 1938 Works Progress Administration painting, “The Net Menders,” by James Fitzgerald remains a showpiece from the original restaurant.
Cindy’s Waterfront, the Monterey Bay Aquarium Cafe and the Coffee Bar will be open exclusively to daytime guests of the Monterey Bay Aquarium. Private evening events are available for groups wishing to reserve all or part of the aquarium.
