A pioneer in South Florida's local foods movement, Allen has long looked to the state's natural resources as inspiration for his cooking. As a young chef, Allen moved to Florida in 1980 and was disappointed to see that local restaurant chefs were not taking advantage of the bounty of Florida's fields, farms and waters. He began sourcing fresh local seafood, experimented with native tropical fruits and looked to the cuisines of Latin America, the Caribbean and North Africa for seasonings and spices. Dubbed New World Cuisine, Allen's locally sourced, globally inspired cooking has won him national accolades, including the James Beard Award as Best Chef: Southeast. Driven to make a difference outside of his restaurant, Allen is deeply involved in the challenge of helping to feed the homeless, hungry and the homebound elderly.
