The dream of Valette Healdsburg began some 15 years ago between brothers Dustin Valette and Aaron Garzini as they were sitting at their father's house overlooking the Alexander Valley. Over a glass of wine the two dreamt of opening a restaurant that showcased the best that Sonoma County has to offer. The restaurant would serve honest food, offer impeccable service and house a collection of boutique, small-production wines. Now, with their 47-plus years of combined experience, Valette Healdsburg shares the passion and dedication of these two brothers.
Dustin began his culinary career at age 13, washing dishes at Catelli's in his hometown of Geyserville, California. Two years later he took an apprenticeship at Chateau Souverain, a Francis Ford Coppola Estate where he worked under the executive chef, Martin Courtman. He later honed his craft in some of the most celebrated restaurants on the West Coast, including the Michelin-starred Aqua in San Francisco and Napa Valley's Bouchon. Additional credits include Hokus at the Mandarin Oriental Hotel Honolulu in Hawaii; the exclusive North Ranch Country Club in Westlake Village, California; and VOX Restaurant & Wine Lounge in Henderson, Nevada. Before opening Valette he was the executive chef of Dry Creek Kitchen, a Charlie Palmer restaurant in downtown Healdsburg. Dustin gathered great acclaim at Dry Creek Kitchen for the strong relationships he cultivated with local farmers and purveyors, and for his exceptional ability to pair some of the country's best wines with his intense flavorful and dynamic cuisine. Opening Valette together is a dream come true for both brothers. The combination of Dustin's culinary acumen and Aaron's savvy ability to provide a warm and authentic environment has brought these two local brothers full circle, back to the land they are from, and working together in the industry they love.
