As the former executive chef of casual dining for the Thomas Keller Restaurant Group, Mark learned to push himself when it comes to creativity and innovation in the kitchen. He learned the beauty of repetition and how it takes a certain level of mental toughness to be able to do something over and over, all while staying open to everything around him. Mark shines at his new project, Vignette, a wood fire cookery, specializing in Neapolitan pizza and fresh, local salads. The new restaurant is a fresh space, where space supports function and is open, honest and transparent, which all lend to the flow of hospitality. Mark offers no compromise in ingredients and what he values is an elevated guest experience. He has an innate quality of "humble meets genuine" and his passion for his craft shines through in every aspect of his life.
