The dream of Valette Healdsburg began some 15 years ago between brothers Dustin Valette and Aaron Garzini as they were sitting at their father's house overlooking the Alexander Valley. Over a glass of wine the two dreamt of opening a restaurant that showcased the best that Sonoma County has to offer. The restaurant would serve honest food, offer impeccable service and house a collection of boutique, small-production wines. Now, with their 47-plus years of combined experience, Valette Healdsburg shares the passion and dedication of these two brothers.
Aaron began his restaurant career at just 14 years old in the kitchen of Catelli's, a beloved restaurant in his hometown of Geyserville, California. After Catelli's, Aaron turned the focus of his restaurant career to the front of the house. For 10 years Aaron refined his skills in the art of providing first-class service at John Ash & Co., a pioneer in world-renowned wine country cuisine. Aaron decided to expand his leadership and service talents in the fast-paced, high-energy, hip San Francisco restaurant scene, gaining several years of invaluable experience at Betelnut Restaurant on Union Street. He then returned to Sonoma County as the restaurant manager at Rustic, Francis Ford Coppola's restaurant at his winery in Geyserville. As the restaurant manager, Aaron led a team in providing warm, hospitable service, intended to welcome guests into the dining room as if welcoming them into their own home. Opening Valette together is a dream come true for both brothers. The combination of Dustin's culinary acumen and Aaron's savvy ability to provide a warm and authentic environment has brought these two local brothers full circle, back to the land they are from, and working together in the industry they love.
