Speaker-Sustainability Across the Border
Tijuana-born chef Javier Plascencia is a fervent and energetic promoter of Baja Mediterranean cuisine, which focuses on ingredients from Baja's local fields, orchards, farms and the sea. He is chef and owner of multiple award-winning restaurants in Baja California and Southern California. Javier has been featured in multiple major media outlets, including The New York Times and Food & Wine magazine, and has appeared on television shows in Mexico and the U.S., including "No Reservations" with Chef Anthony Bourdain and "Mexico: One Plate at a Time" with Chef Rick Bayless. Plascencia is a vocal advocate for the sustainable food movement both in Mexico and the United States, in particular sustainable fishing. He was named one of the "Distinguished Baja Californians of 2013" by the state government, and also named one of the "50 people that are transforming Mexico" by Quien magazine, for this work in promoting the people, products and culture of Baja.
