Matt Bolton is Executive Chef at InterContinental The Clement Monterey. A California native, he began developing his culinary talents at the age of 15, eventually working in kitchens at the Monterey Plaza Hotel & Spa, Bernardus Lodge, Quail Lodge & Golf Club and Highlands Inn. Bolton joined the Intercontinental The Clement in 2014 where he takes inspiration from the abundance of fresh, local vegetables, fruits, fish and meats on the Monterey Peninsula to create menus that celebrate these local offerings. His menus at The C Restaurant are accessible, imaginative and not overly rich—relying heavily on superb ingredients and flawless preparation.
