Estevan "EJ" Jimenez is Chef de Cuisine at AQUA TERRA Culinary. Jimenez began his culinary career with a degree from California School of Culinary Arts, graduating with honors. While studying there, he held positions at The Huntington Museum, Library and Botanical Gardens (Pasadena, CA) and the Jonathan Beach Club (Santa Monica, CA). In 2005, he relocated to the Monterey Peninsula, working at the Monterey Bay Aquarium's Portola Restaurant as the Restaurant Chef, Banquet Chef and later Chef de Cuisine. From the Aquarium, Jimenez then became Executive Sous Chef at Ventana Inn and Spa in Big Sur. In 2010, Jimenez was one of the original employees of AQUA TERRA Culinary, Inc. serving as Chef de Cuisine and overseeing all culinary operations including a school lunch program, restaurant, café, and an extensive catering operation. Jimenez brings to AQUA TERRA an advocacy for sustainability and a passion for local, seasonal products.
